The Witcher TV series has got me a bit more interested in the game. Can you play w3 if you haven't played the first two? Also what's the gameplay like using Skyrim as my reference point? It's third person? Are there dungeons/caves? Is it an action rpg? How do the battles play out? Also how is the TV series vs the games do they cover the same plot points?

I played 3 without having played the first 2 and the only thing that was weird was when some characters Geralt was meant to know well were introduced half-way through the story (Dandelion comes to mind), but it really didn't matter. It's not much like an Elder Scrolls game at all. The combat is much more involved; basically a crappy third person beat 'em up shoe-horned into an RPG. I think the combt is awful, but most people don't mind it. As for how fights play out, you walk up to an enemy, buff yourself, then bash them over the head/cast some spells. Outside of dungeons and story sections, they're pretty easily avoidable, for the most part. There are indeed dungeons, and they're more interesting than Elder Scrolls dungeons, with slightly more complex exploration elements, and some semblance of pacing (at least when it comes to main story dungeons). The quests are way better than most RPG quests. The bad side quests are like good Elder Scrolls quests and side quests, and the good ones have stories more interesting than most RPG's main stories, but ultimately are structurally your standard RPG side quest, or with the more complicated ones; think an Elder Scrolls guild story, but as a side quest. The main story has a massive pacing drop in the middle, but otherwise is one of the best RPG main quests, from the story to the way it leads you around the world, to what you're doing on the quests. In spite of the crappy combat, the finale manages to "epic", as well.

Can't comment on how it compares to the show, as I haven't seen the show.

This. Witcher 3 is the only game to really move the storyline from the books forward. Witcher 1 and 2 has geralt with amnesia and it doesn't have two of the main characters. So yes just play 3.
