I have a really simple but delicious recipe for Chinese egg custard tarts. These are specialised dim sum desserts only produced on weekends. 

All you need is to roll out some frozen puff pastry really thinly, use a cup to cut discs and put them in a baking tray for muffins or something. Brush some melted butter over the edges.   

Then mix:

2 eggs

1 and a half cups of whole milk

4 ounces of sugar

Whisk it all up and leave it for 40 minutes to settle and get the air bubbles out. Then spoon the liquid into each mold, chuck into the oven on about 150c for 30-40 minutes and its done. 

Poke a knife into the custard, if it comes out clean its done.

I was  going to make some tarts this week.  I think I'll try this out and
you made me think of a simple lemon tart I like to make.
I just get a piecrust, I usually can't be bothered to make it.
then
You need
Grated zest of 2-3 lemons - depending on how much kick you want
2/3 cup lemon juice
1/2 cup superfine sugar
1/2 cup heavy cream
3 large eggs
3 large egg yolks
Very basic.
Mix the zest, juice and sugar to blend. Beat in heavy cream and the eggs and yolks one by one.
Pour it in pastry, oven  at 375 for 20 minutes.
The longer you let it cool the stronger the  lemon kick will be. (also depending on how much rind you use of course) I let it sit overnight.

I also made a garlic dip once and ignored the recipe and poured on the garlic. It was very nearly inedible.

What tangible effect does cooking them on the weekend have? Does it improve the flavour; change the texture?

I like to invent cake recipes and then make them. And add green food colouring. It makes all the difference!

My cooking knowledge is barebones and quite frugal. Basically the kind of stuff you make so you won't starve and that's enough. I'm no gourmet, sadly.

My wife is quite expert at the cuisine arts.  I have no skills, all I can make is ramen noodle + baked beans on toast (with peanut butter and hot peppers).

It's just a tradition. I was pretty amazed when eating one at a fancy dim sum place. Went to some other places during the week and they never had them. It's a tradition to only make them on the weekends, so bear that in mind next time you go to a dim sum place and order them on a saturday.

 i'm like this too.  i enjoy cooking when i get around to it, but sadly it takes me many hours to prepare a meal and on most days i don't have that long

I cook a lot and nobody ever complained about my food so I suppose I'm not bad at it ^^ I don't cook much pastry though, I don't have a sweet tooth. I keep my meals simple and fast, preparation must not last more than half an hour. I don't think I have some favorites dishes to do, I always like to try something news, maybe I could say that my favourites dishes are those inherited by my parents (actually by my father who inherited it from my grand mother) like stuffed tomatoes. Pretty traditional southern France stuff.

 I tried cooking a Petit Sale a few months ago. Delicious with the smoked sausage. You ever tried it?

With lens? Yes, that's something I cook quite regularly since it's the best way to eat green lens Nyaa (I use coral lens for soup).
The meat I use vary quite often according to what I can find at my butcher, but yeah smoked sausages are just yummy especially when cooked with the mix of bouillon and tomato sauce <3

Some definitely non-traditional recipes but easy and fast to do, so the "I don't know how to cook" can try them!


1- Banana and chicory Salad!

That's an easy salad, really. Just:
- Cut the chicory taking care not to use the heart which is bitter.
- Cut the banana and the avocado
- Mix the 3 ingredients in a bowl
- Put some fresh coriander on the top
- Seasoning with olive oil and balsamic vinegar, dont forget a little pepper (5 pepper berry is the best)

2- Avocado/mango salad


Very simple, just count one avocado per person and one mango per 2, slice it nicely and dispose it in a plate.
Put some coriander leaf, seasoning with olive oil, balsamic vinegar and 5 pepper berry

This dishes is simple but very good if you have some good ingredient, take a very ripe mango and some fresh coriander.


3- Sweet potatoes with orange juice!


- Wash and cut the sweet potatoes in not too large slice
- In a wok or in a saucepan, make a light and still liquid caramel with some cassonade and a little water
- Cook quickly the sweet potatoes slice in the caramel then add some orange juice, just enough to cover the sweet potatoes
- Cover and let cook with a medium fire, uncover when the potatoes are almost done to make the juice reduce
- Eat hot or warm

This doesn't really count, but to have the best bagel ever:

-Split a sesame seed bagel
-Spread with honey
-Toast
-Add margarine

The best bagel ever imo:

- Split the bagel (everything bagel, or sesame bagel)

- Put it in the toaster

- Spread cream cheese

- Add 2 small slices of smoked salmon

- Add a bed of rocket salad (or mixed leaf salad with plenty of rocket)

- Ground a little pepper

- Add a few drops of balsamic vinegar

- Enjoy

 Yuck. One thing I can't eat is fruit mixed into a main meal. Including salad. Fruit is for desserts.

Generally I don't like tomatoes. I have them on pizzas and occasionally if they are raw in a sandwich and I can't be bothered to remove them. 

In curries they work because the spice changes the flavour, it becomes like a thickening agent.
