At some point someone is going to have to sit down with me and explain if there's more to Minecraft than just digging and building crude houses. I know there's more... I just can't figure out what it is. You can make fire right? Do you just steal shit from the pig people and use that to make houses?

I think they added a quest mode or something. The point is to dig and dig and dig and go down to the deep were horrible things live so that you can create giant castles or whatever.

Or couldn't you just not and live a reasonably peaceful life amongst a not-so horrible things like cows?

I've seen videos of people that have built underwater fortresses with glass windows and even large-scale rollercoasters. Build whatever you want.
